As this heat wave continues, we thought you might like a creamy strawberry ice cream recipe to help keep you cool for a treat. Only five ingredients needed and no ice cream machine necesary.
Equipment
- bowl
- masher or fork
- spoon
- whisk - hand or electric
- freezer containers - empty, clean take-away containers work well
Ingredients
- 500g strawberries
- tin 397g condensed milk
- 250ml greek yogurt
- 250ml whipping cream
- 1 teaspoon vanilla extract
1
Dig the green stalks out of the strawberries, this will take time but it's worth it, you don't want the green stalks in your ice cream.
2
Put the strawberries into a bowl and mash with a potato masher or a fork until the berries are a pulp.
3
Add the condensed milk, yogurt and vanilla and mix with a big spoon.
4
In a clean bowl whip the cream with a whisk until you have soft peaks. This will take a little while if you're using a hand whisk, but keep going. Ask a friend to help you.
5
Add the whipped cream to the strawberry mixture and mix together. Pour into freezerpoof containers and freeeze for a few hours or until frozen.
6
You will need to take the ice cream out of the freezer a few minutes before you want to scoop to give it a chance to soften slightly...
