I’m in training for a TV series in which I need to bulk and gain muscle. I eat these sweet potato fries with chicken burgers and fried eggs to help me pack in the protein.
Equipment
- small, sharp knife
- chopping board
- bowl
- roasting tray
Ingredients
- 2 large sweet potatoes
- olive oil
- salt and pepper

Preheat the oven to 200ºC/400ºF/gas. Wash 2 large sweet potatoes under cold running water, scrubbing well to get rid of any dirt (there’s no need to peel them).

Cut each sweet potato to the desired size but remember the thinner they are the quicker they cook. My personal favourite are thin crispy fries!

Add to a large mixing bowl, then sprinkle over a tiny pinch of sea salt and black pepper. Drizzle with 1 tablespoon of olive oil, then toss everything together to coat.

Spread out into a single layer in a large baking tray, using oven gloves put the tray in to the oven and cook for 35 to 40 minutes, or until golden and cooked through.
